Another Great Pizza Night with a New Recipe

Grilled Pluot and Cherry Chutney with Smoked Ham Pizza

1/4 of Pizza Dough recipe
4 slices of smoked ham, cut into thin strips
1/4 cup olive oil
1/4 cup red onion, sliced
2 pluots, quartered and sliced
1/4 cup cherries, pitted
1 tsp salt
1 1/2 tsp garam masala
2 cloves garlic, minced
2 tsp ginger, minced
2 oranges, juiced
1/3 cup red wine or white wine vinegar
1/4 cup honey
1 cup grated fresh mozzarella
1/2 cup sliced manchego cheese
2 tbsp cilantro, chopped for garnish

In a saute pan on medium heat, cook strips of ham until brown and slightly crispy, then set aside.  In same pan, add olive oil, red onion, pluots, cherries and salt, cook until soft and tender, around 5-7 minutes.  Add garam masala, garlic and ginger, cook another 2 minutes.  Add orange juice, vinegar and honey, reduce until sauce is thickened.  Take off heat and set aside.

Pre-heat grill on medium heat.  Roll out pizza dough into an oblong shape, place on a corn meal dusted cookie sheet.  Spread on Chutney, top with mozzarella, ham, then manchego cheese.  Reduce heat on grill to low, then cook for 10-15 minutes or until crust is crispy and golden brown, and cheese is melted and bubbling.  Top with cilantro for garnish.
